Ingredients:
Red Velvet Cake
125 ml (4.2 fluid ounces) sunflower oil
200 g (7.1 ounces) caster sugar
210 g (7.4 ounces) cake or sponge flower
- if you cannot find cake or sponge flour in your supermarket use
self-raising flour
2 large eggs (3 medium)
155 ml (5.2 fluid ounces) buttermilk
Red colour
- available from supermarkets, baking supply stores, and online at Bad Ass Cakes (www.badasscakes.co.uk). Use as per maker’s instructions and to achieve the colour you want.
½ tsp vanilla extract
¼ tsp salt
¾ tsp apple cider vinegar
¾ tsp bicarbonate of soda
½ tsp cocoa powder
Enough for 2 x 8-inch tins or 2 x 6-inch plus cupcakes
Bake at 325 F, 160 C, Gas Mark 3 for about 35 minutes (bake cupcakes for 22 – 23 minutes, same temperature)
Classic Cream Cheese Buttercream
600 g (21.16 ounces) icing sugar
500 g (17.6 ounces) soft butter
340 g (12 ounces) cream cheese
1 tbsp hot water
2 tsp vanilla extract
Stock/ Simple Syrup
200 ml (6.8 fluid ounces) water
200 g (7.1 ounces) caster sugar
Boil water and sugar until sugar dissolved, cool and store in a fridge.
